Sticky barbecue chicken wings and drumsticks

This is a no-fuss barbecue chicken recipe - simply marinade the chicken overnight and throw it on the BBQ.

Ingredients

  • 6 chicken drumsticks, preferably free-range
  • 6 chicken wings, preferably free-range

For the marinade:

  • 2 tbsp clear honey
  • 3cm/1¼in piece of fresh ginger, peeled and grated
  • 1 garlic clove, crushed
  • 1½ tsp Chinese five spice
  • 2 tsp soy sauce
  • 3 tbsp orange marmalade
  • ½ tsp grated orange zest
  • 1 tbsp sesame oil

Slash the chicken drumsticks three to four times each with a sharp knife and place in a non-metallic bowl with the chicken wings. Mix together all of the marinade ingredients and pour over the chicken. Leave to marinate for at least 2 hours, or overnight if you can, turning occasionally.

Once it has marinated, place the chicken on the barbecue over medium-hot coals and cook for about 20 minutes, brushing with any marinade left in the dish as it cooks. If it's colouring too quickly, move to a cooler part of the barbecue to cook more gently. It's important you cook the chicken all the way through.

If you're unsure, pierce a drumstick with a skewer: if the juices are still pink, carry on cooking. Eat as soon as they're cool enough to handle, with the sticky sauce all around your mouth and fingers. Isn't that what barbecues are all about?

The chicken can also be cooked in the oven for perfect picnic food. Preheat the oven to 200C/400F/Gas 6.

Transfer the chicken into a roasting tray with a couple of spoonfuls of marinade. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until thoroughly sticky and golden, adding extra marinade to the tray if necessary. Once the chicken pieces are cooked, eat them when fresh and hot, or leave to cool before packing up for a picnic or packed lunch.

It’s unofficially summer, and it marks the start of my favorite time of year (check out my summer recipes). Coming from the tropical island of Penang in Malaysia, I love the warmth of sun, more importantly, I love summer parties, BBQ cookouts, beaches, ice cream, shaved iced, sundresses, sandals, and so much more. Summer is indeed a happy season!

To celebrate summer, I made these amazing Asian BBQ wings, which is an excellent BBQ wings recipe to add to your summer grilling and BBQ repertoire. These Asian BBQ wings are pre-marinated with ginger, garlic, soy sauce, oyster sauce, and five-spice powder. The wings are always a hit whenever I have summer parties. They are always the first ones to go. They are excellent hot off the grill, and great with a dash or two of your favorite chili sauce.

For the wings, I recommend party wings, which you can get from the frozen section of all supermarkets. Party wings are usually smaller and they are perfect for this recipe. I am not sure about you, I am always skeptical about those super-sized chicken wings that look like turkey wings than chicken wings. All wings have skin. There is no skinless chicken wings.

Hi this recipe seems perfect for my upcoming Bbq gathering with friends! Can I replace honey with maple syrup instead?

Do they need to marinade overnight? If not how long do you recommend?

I thought these were especially good but while making the marinade, at least for our tastes, I thought it was lacking heat and acid. I decided to add red pepper flakes and a couple tsps of rice wine vinegar. They came out very delicious. I will be using this recipe again in the future. Thanks for sharing.

Do I need to increase the ingredients amount proportional with wing weight?

Loved these wings. I baked them in an oven at 180 degrees for about 45min, but 35min would probably have been enough. Came out deliciously charred and tastes exactly like the wings sold in the hawker centres in Singapore. Great recipe!

If we were to pan fry them, how much oil should we use and how long do we cook them for?

Just use non-stick and add a little oil and cook until they are cooked.

It's All About the Marinade: How to Grill Super Juicy Chicken Wings

Crispy skin, tender meat, and herby, big flavor—no wonder chicken wings are one of our favorite things to throw on the grill.

Buffalo, Korean-style, fried—however they're prepared, we love cheap, easy, and crowd-pleasing chicken wings . But, for summer, there's no chicken wing we want more than one that's been marinated and grilled to crispy-juicy perfection. Okay, fine, we don't just want one—we want a dozen. Here's how it's done.

The Marinade

Flavorful chicken wings start with a punchy marinade. We like a Mediterranean-inspired mix of oregano, rosemary, salt, pepper, garlic, and olive oil, but any fresh marinade will help infuse the wings with flavor down to the bone. Resealable plastic bags are your friend here; combine the marinade and wings in one and let it sit for at least an hour before grilling.

Build a two-zone fire in a charcoal grill so you've got a hot spot banked with coals and a cooler spot. You want to grill the wings over medium-high heat, turning occasionally until the fat on the chicken skin gets crispy and browned all over. Then you'll cover the grill and let the wings cook through. If you're unsure whether they're done, err on the side of caution and leave them on the grill for a few more minutes more. No one wants an undercooked chicken wing.

The Finish

What do marinated chicken wings need? More marinade, of course. Reserve some extra sauce—separate from any marinade that's touched raw chicken—and spoon over the cooked wings before serving. We promise they'll be eaten faster than you can say, are there any wings left?

Ingredients

  • 2 chickens (or 4 whole bone-in chicken breasts) halved lengthwise
  • 1 1/2 cups Neely's Italian Dressing, recipe follows
  • 1/4 cup Neely's Barbecue Seasoning, recipe follows
  • 1 cup Neely's Barbecue Sauce, recipe follows
Neely's Italian Dressing:
  • 2 tablespoons ground mustard
  • 2 garlic cloves, smashed
  • 1 tablespoon crushed red pepper flakes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 tablespoon sugar
  • 2 tablespoons Neely's Barbecue Seasoning
  • 1/3 cup red wine vinegar
  • 1 cup canola oil
  • Salt and pepper
Neely's BBQ Seasoning:
  • 1 1/2 cups paprika
  • 3/4 cup sugar
  • 3 3/4 tablespoons onion powder
Neely's Barbecue Sauce:
  • 2 cups ketchup
  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 5 tablespoons light brown sugar
  • 5 tablespoons sugar
  • 1/2 tablespoon fresh ground black pepper
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon ground mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce

Directions

Rinse chicken halves in cold water and pat dry with paper towels. Place chicken in a large bowl or baking dish, coat with Italian dressing and evenly season with Neely's Barbecue Seasoning. For best results, allow the chicken to marinate in the refrigerator overnight.

If cooking inside: Take the chicken out of the refrigerator and brush chicken with Neely's Barbecue Sauce.

Place into a preheated 350 degree F oven for 45 minutes.

If grilling outside: Thirty minutes before you're ready to cook, take the chicken out of the refrigerator and allow it to come to room temperature. Preheat the grill to a medium temperature, about 275 degrees F preferably over hickory and charcoal.

Place the chicken halves on grill, meat side down. Cover grill and cook for about 50 minutes. Flip chicken over and let it brown until the chicken becomes golden, about 15 to 20 minutes. The wing and the drumstick should become very tender and will easily pull away at the joints. Brush the chicken with Neely's Barbecue Sauce during the last 5 minutes of cooking.

Neely's Italian Dressing:

Mix all the ingredients together in a bowl, except the oil and salt and pepper. Slowly whisk in the oil and season with salt and pepper, to taste.

Neely's BBQ Seasoning:

Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.

Neely's Barbecue Sauce:

In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

Bbq chicken wings marinade

1 teaspoon salt

1/4 cup chopped lemon grass

8 cloves garlic -- chopped

1/2 teaspoon white pepper

1/4 cup minced cilantro root or coriander root

1 teaspoon turmeric

Combine the ingredients for the marinade in a blender. Rinse chicken wings in cold water.

Place the chicken wings into a Ziploc bag with the marinade and leave in the refrigerator overnight.

Barbecue the wings over medium hot coals for 5-7 minutes on each side (turning once, half way through) until they are cooked through and golden brown.

Directions

  1. Wash, dry, and season the wings with the salt, garlic, pepper, cayenne, sugar, and paprika. Preheat the oven to 375.
  2. Spray a cookie sheet with a generous spray of cooking spray.
  3. Place the wings in a single layer on the cookie sheet, and place in the oven.
  4. Cook for 35-40 minutes, depending on the size of the wings, turning once.
  5. While they are baking, make the sauce by slowly simmering the sauce ingredients over the lowest heat.
  6. When the wings are done baking, carefully dip them in the sauce, and place them back in the oven for another 5 minutes, or until the sauce is bubbling.

  • 2 cups tangy barbecue sauce

Directions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Bend the wings and tuck the tips under the large joint to form a triangle.
  3. Season the chicken wings on both sides with salt and pepper.
  4. Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
  5. Bake the chicken wings, turning once, until browned, about 45 minutes.
  6. Remove the wings from the oven.
  7. Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
  8. Return the wings to the pan.
  9. Pour the barbecue sauce over the chicken wings and return to the oven.
  10. Bake for 10 minutes.
  11. Turn the wings over and bake 10 minutes longer.
  12. Serve hot, at room temperature, or cold.

Brown Sugar Barbecue Baked Chicken Wings Recipe

We love getting a little dirty, it’s just more fun that way! Not so dirty that you need to bring out the Stain Master, but dirty enough to require more than one napkin. The sauce for these brown sugar barbecue baked chicken wings recipe is a cinch. There is no cooking needed! All you do is stir a few things together then coat the wings and bake.

Barbecue Baked Chicken Wings – Make the Sweet and Spicy Sauce Everyone Will Love

These baked wings are very simple and we love this sauce! No cooking required. Just stir and slather over your baked wings!

You’ll need ketchup, brown sugar, cumin, soy sauce and something that you will always find in our kitchen, sriracha chili sauce!

See it in the back of the photo? That’s what your looking for, we buy ours at our local grocery store in the international section, but you can find it at Asian or International grocery stores, too. Get a bottle, you’ll love it! You could even make a double batch and save it in the fridge up to one week. Dip fries, veggies or chicken nuggets in it and you’ll be happy.

How to Bake Wings

We’ve seen chicken wings sold two ways. First, everything has been done for us – the drumette and wing are already separated. It’s great to find this, but sometimes we don’t and instead have to do some light butchering before cooking. Separating the wing and drumette is really easy, just hop on over to our video to see how. It will only add 5 minutes to your prep time, no biggie! Or, leave them unseparated. It’s completely up to you!

  1. Toss the wings with half of the sauce. (Save the rest for later so you can dip!)
  2. Line them up on a baking sheet. Notice that we inset a baking rack inside our baking sheet — if you have this option, do it. We find that the chicken gets just that little bit crispier. We do this for bacon, too!
  3. Bake the wings until cooked through, about 30 minutes, and then serve with some of that saved sauce from earlier. (Remember, never use the same sauce that you tossed with raw chicken, once the chicken has cooked).

Brown Sugar Barbecue Baked Chicken Wings Recipe

Sweet, smokey and just a little spicy, the sauce for these wings comes together in 5 minutes and is crazy good. We’ve seen chicken wings sold two ways. First, everything has been done for us – the drumette and wing are already separated. It’s great to find this, but sometimes we don’t and instead have to do some light butchering before cooking. You Will Need

1/2 cup lightly packed brown sugar

1 tablespoon apple cider vinegar

1 tablespoon Sriracha chili sauce

1 teaspoon light soy sauce

1/2 teaspoon ground cumin

3 pounds chicken wings, wing and drumstick separated

Directions

Heat the oven to 400 degrees F. Line a baking sheet with aluminum foil. If you have one that fits, lay a cooling rack inside the baking sheet, this helps get the chicken extra crispy – see note below. Spray rack with nonstick cooking spray.

In a medium bowl, whisk together the ketchup, brown sugar, vinegar, Sriracha, cumin, and soy sauce. Taste and adjust with additional soy sauce or sugar. Set aside 1/2 cup of sauce for tossing raw chicken and save the rest for dipping once the chicken has cooked.

Toss the chicken wings with the reserved 1/2 cup of sauce then add to the prepared baking sheet. Bake the chicken wings, turning once during cooking, until an internal thermometer registers 165 degrees F, 35 to 45 minutes.

Serve the baked wings with the sauce you set aside earlier, either on the side or tossed with the chicken.

  • If you do not have a wire rack that will fit inside a baking sheet (here’s one online), you can still make wings. Arrange them on the baking sheet, without the rack and rotate a few times during baking.

BBQ Chicken Wings

Time to say good bye to summer and wish everyone a Happy Labor Day! Be it with one last barbecue, the last dive in the pool, and the last break before the kid’s crazy schedules start! We barbecue pretty much all year around but we definitely barbecue more frequently during the summer time. I want to squeeze in one more BBQ recipe before its season ends. Hope you enjoy my BBQ Chicken Wings recipe as much as my family did.

Today’s recipe is adapted from my BBQ Short Ribs recipe. We really like this marinade and use it often, but one day I made the same marinade for chicken wings and decided to change a little bit by adding honey and an apple. It was another hit especially for our children, so I decided to record this slightly adapted version in my Just One Coookbook as well. It’s really easy and delicious, just like the BBQ Short Ribs recipe.

  • 1.5-2 lb chicken wings (flats/drumettes)
  • 1 cup soy sauce
  • 1 cup mirin
  • ½ cup granulated sugar
  • ¼ cup gochujang (Korean hot pepper paste)
  • 8 cloves garlic (minced or garlic-pressed)
  • 2 Tbsp sesame oil
  • 1 Tbsp white sesame seeds (roasted/toasted)
  • 1 green onion/scallion (finely chopped)
  • 1 Tbsp honey
  • 1 apple (grated) (I used Fuji apple)

Oven: If you want to use oven, preheat oven to 400F. Place chicken in a single layer on a wire rack over oven tray lined with aluminum foil (for easy cleaning later). Bake 30 minutes (depending on the size of your chicken wings) until well browned and cooked through. If chicken is cooked through but not brown enough, then change the oven setting to broil and broil for 2-3 minutes at the end.

Oh wow Nami, these look great! It was second day of spring here yesterday (and Father’s Day) and so, yes, eager to taste summer, we cooked American-style beef burgers over our charcoal barbecue! These wings must have been so tasty and I am pleasantly surprised at the grated apple in the marinade… delish! Hope back to school routine is not too hectic for you!

You would be the only person in America eating chicken wings with chopsticks 🙂 How can you wear this divine goodness all over your face that way? LOL They look fantastic!

Haha! Funny… I know what you mean because I now live in the US and I know no one would eat (American) wings with chopsticks!

However, if chicken wings are served with other Japanese food, sometimes people hold one side of the wing with chopsticks on one hand and other side with your other hand. Otherwise we have to wipe our hands each time to hold chopsticks to eat other food on the table.

Of course, most of the time when chicken wings are served we use both hands, but when it gets messy, I still use my right hand for chopsticks to hold the wing! Until you mentioned, I never thought it’s a funny scene for others. Although I think it’s practical to eat like that (one side chopsticks one side hand), I have no idea if this is considered as a bad chopstick manner in Japan… Someone might give me a lecture. Haha.

Am warmly laughing: I’m European born, Caucasian of race, living in Australia, but have always used chopsticks to eat my chicken wings [as I do with 80% of all other food 🙂 !]. And if someone DID give me a lecture, am afraid I would softly disregard and say ‘my way’!!

Nami, what an interesting twist adding a grated apple to the marinade for these BBQ Chicken Wings – the recipe looks wonderful and I am thinking that having made my usual recipe for grilled chicken wings last week, it is high time that I try a new one and this recipe of yours sounds wonderful, I am sure that we will thouroughly enjoy it. Oh yum! I need an outdoor space so badly so I can grill – those indoor electric grills just don’t give the same flavor/feeling. The apple is a great touch.

It will take some time to cook on the grill pan but yes, you can use it. 🙂

Nami, I think I could have your gorgeous BBQ dishes several times a week. The chicken looks so sticky and as soon as I saw gochujang I knew I would love this marinade. (Have I told you I cannot live without gochujang?. It’s such a magic ingredient making everything taste better, giving a kick to every dish and making every sauce silky and smooth.) The last photo is so real I almost feel the fabulous smell of the drumettes! I don’t have a grill alas, but I will remember your marinade and use it under the broiler. Fuji apple… I must check what it is.

I’m not ready to say goodbye to summer just yet. Seattle is actually seeing some lovely warm weather after a very, very cool summer. We hate to see it end. Thanks for adding a link to gochujang. It’s not an ingredient I’ve used before. We love these little drumsticks in our house.

I love chicken wings because of its texture and also the delicious skin when BBQed! Your recipe is delicious because you are using a Weber and coal which I am sometimes too lazy to do. But summer is fast approaching and time to fire up the BBQ again. My shortcut recipe is to bake them in the oven in winter which is also quite nice because the skin is so crispy and delicious.

I still don’t feel ready to say goodbye to summer yet, but it’s harder to be in denial after Labor Day. That chicken looks mouthwatering, nicely glazed and just slightly charred. I have to tell you, I did make your Thai lemongrass chicken again for our potluck/cookout at work on Labor Day! I cut up the meat and grilled it at home as kabobs, then reheated them on an electric griddle at work, and they were so popular there were none left. I’ll have to try this recipe now!

What could I use instead of gochujang I live in Chester, England and haven’t heard of it.

Hi Heather! It’s a Korean condiment, so you can find it in Korean/Asian (or sometimes even in Japanese) supermarket. It’s sort of key ingredient here to give a spicy kick to these wings. You can omit or try with other kinds of chili. If you omit, it lacks some depth in flavor, so maybe add garlic to spice it up. If you have miso you can add that instead too. Hope that helps!

Hi Christina! Don’t worry, it shouldn’t be too spicy. My kids and I can’t eat spicy food. 🙂 I would recommend you to add a little bit or you can omit, if you worry. 🙂

Hi Rebecca! Thank you so much for trying my recipes! Yes, you can. The marinade is pretty flexible, so if you like it to be spicy, you can definitely add more red pepper flakes. Hope you enjoy this recipe! 🙂

Tried this recipe with different cooking method. I put marinated chicken into a wok (pan will do too), with a small fire on gas stove, put on the lid. The natural water from chicken will come out and together with the steam, they will cook the chicken. After they cooked entirely, open the lid and let the liquid reduced and slowly coat the chicken pieces. They will have some chars too in some ways 🙂
