    The Spanish call it plancha. Argentineans call it chapa. I call it one of the best ways to marry the searing and crusting capabilities of a cast iron skillet with the intense heat and smoke flavor produced by your grill.

    A plancha is a sort of griddle—a thick, flat slab of cast iron you place on your grill for searing small or delicate foods like asparagus stalks, bay scallops, shrimp, fragile fish fillets, chicken livers, and yes, even diced poultry and thin steaks.

    The plancha gives you a different sort of sear and crust than you get with straight grilling. Sure, you can cook with a plancha on your stove. But the process gets a lot more interesting when you do it on your grill. Simply toss a handful of hardwood chips on the coals or in your grill’s smoker box half way through the cooking. You get the searing benefits of the plancha and the wood smoke produced by the grill.

    Here’s how it works, for example, for barbecued scallops or shrimp:

    Set up your grill for indirect grilling and preheat to medium-high (400 degrees). Place the plancha in the center and preheat it to 400 degrees, too. To check the temperature, use our new point-and-shoot Infrared Thermometer. Or sprinkle a few drops of water on the plancha. If they evaporate in 2 to 3 seconds, you’re ready to go. Note: On some grills you may need to light the burner or rake the embers directly under the plancha, too.

    Now season the shrimp with your favorite barbecue rub (I’m partial to Best of Barbecue All-Purpose Rub or Mediterranean Herb Rub). Drizzle with a spoonful of melted butter or olive oil and toss to coat each piece.

    Pour 1 to 2 tablespoons olive or vegetable oil over the plancha and spread it evenly over the surface with a spatula. Arrange the shellfish on top and cook until the bottoms are seared and browned, 1 to 2 minutes, then turn over with a spatula.

    Now toss 1-1/2 cups unsoaked hardwood chips, like our new Best of Barbecue Cherry Wood Chips, on the coals (or place in the smoker box of your gas grill). Lower the grill lid to hold in the smoke and continue cooking for 1 to 2 minutes or until the shellfish is cooked and smoke-flavored. Turn once more with a spatula and you’re ready to serve.

    Another advantage: you can douse the shellfish with a shot of brandy, rum, or ouzo (light it with butane match) to flambé it at the end.

    The Best of Barbecue Plancha. Because sometimes a slab of cast iron can do an even better job than a conventional grill grate.

    Guide Review - Weber Genesis II LX S-340 Gas Grill

    In the past, if you wanted a Weber Genesis Gas Grill, your choices included colors, whether or not to have a side burner, and a few minor cosmetic elements, like stainless steel hood and doors. Now, this ever popular grill can be had in a number of sizes, ranging from a small two-burner unit to the monster six-burner.

    The LX series of Genesis grills takes the line to a new high-end position. Where the standard Genesis II is made in China, the LX series is made in the United States in the same factor that once made all of the Genesis and Summit series gas grills.

    But it isn't just the variety in the number of burners (there are also two, four and six burner versions of this model). The entire cooking system has been redesigned, most notably, the burners with what they call the GS4 cooking system. In the past, the burners on a Weber gas grill were the typical stainless steel tubular burners. The new burners are rectangular, top ported and tapered. What this means is that the fire shots directly up into the "flavorizer" bars and are tapered to provide an even heat front to back. Simply put, the pressure inside the burner is the same all they way through, so the flames have the exact same pressure through every port. This gives the Genesis, one of the most even heats of any gas grill on the market.

    The other innovation with the model is the new ignition system. Turn the control knobs and the igniters continuously keep the burners lit. These igniters sit under a protective cuff that Weber is confident will allow them to last for ten years.

    They even warranty the ignition system for that long, giving this grill the longest and most complete warranty in the industry. Weber's legendary support remains unchanged and with this warranty, the rest of the business is going to have to catch up on reliability.

    The Genesis II LX S-340 is a full feature grill. It has three main burners, a good quality side burner and a long list of bells and whistles. These include a tank scale, illuminated control panel and complete compatibility with Weber's iGrill 3 technology. With this added feature, you can monitor the grills cooking temperature as well as multiple food items. It will also monitor fuel levels and remotely control the lights in the control panel. For a list price of $1,499USD (typically selling for $1,299USD) this is a large, but simple gas grill.

    The price of this grill is relatively high, but the construction quality is excellent and it more than delivers on all of its promises.

    The one odd, even humorous feature of this gas grill is that the burners have a "High Plus" setting, meaning that you can literally turn the heat to 11. "Spinal Tap" fans will get the argument that maybe high should have just been hotter and that there isn't a point in a "High Plus" setting.

    The 1977 Weber Charcoal grill is identified by lid vent with the engraved Weber logo (not embossed). Notice the vent rivet installed inside the lower cased ‘b.’ The turn tabs on the lid vent are small and round, while the turn tabs on the bowl vents are wide, with two tabs per vent.

    The wheels on ’77 kettles are the modern style, with the white snap on hub or “whitewall” that is prone to breaking.

    Changes in 1977

    By 1977, Weber had changed the name of the two tone brown kettle from Copper Mist to Chocolate. These colors already had several variations, the name change was likely a marketing decision. Everyone loves chocoloate! It should also be noted that by 1977, the model numbers had been updated from the old BK-300,700,800 over to the “30,000”, “70,000” and “80,000” series respectively.

    Weber vs. Char-Broil are two of the most popular bbq grill brands. Consumers are choosing between these two grills in stores nationwide, but which is better?

    We will look at both companies, their features and prices and try to determine the better buy.

    Char-Broil is a privately owned subsidiary of the W.C. Bradley co. which was founded way back in 1885 in Columbus, Georgia. The W.C. Bradley Company was initially started as a cotton and textile manufacturer. In the 1920s Bradley realized the need to diversify so he purchased the Columbus Iron works.

    In 1949 the Iron Works manufactured its first cast iron barbecue grill. In 1973 production moved to a new plant in the Bradley industrial park and the name Char-Broil was given to their line of gas grills. Char-Broil Grills today are made in China. To be transparent, we have never sold Charbroil at Yale. I have owned one however.

    Weber Grills

    In 1952, George Stephen, a Weber employee cut a marine buoy in half, added some vent holes and legs and the Weber grill was started. His invention of dome shape grills with a cover to protect the food from the elements was an immediate success. Later in 1956 he redesigned the kettle grill for a more current design. George, the master griller, was continuously looking for ways to improve the kettle grill.

    In 1985, he added metal flavor bars to provide better heat distribution and control drippings which reduce flair ups. This method of cooking makes the grill easier to clean and gives it better heat distribution. This new design was the Weber Genesis grill which changed the design of gas grills forever. Weber is actually the least serviced brand at Yale including appliances.

    Which is Better?

    Well, price is a factor as the Char-Broil is cheaper at $449 compared to $549 (we include free delivery and assembly for grills over $499). Char-Broil is also a hotter grill at 48,000 BTU vs 32,000 for the Weber.

    Construction

    Most Char-Broil grills are made of type 430 stainless steel. This lower grade of stainless steel tends to rust in a few years, especially around the burner box. Weber grills are constructed of a higher grade of stainless steel and porcelain which holds up in all types of weather and heavy use.

    Weber is also easier to clean with channels that direct the excess grease into an aluminum tin located under the grill. The tin can be easily removed, thrown out and then replaced keeping your hands clean and free of grease.

    You need to lift off the grates and remove the grease manually from the burner box located under the burner in a Char-Broil.

    Overall construction includes the wheels. Charbroil is plastic, and Weber has weather resistant casters.

    I have personally owned both grills. I actually liked Char-Broil and it does technically have better specs. However, I recently bought another Weber because of the upgraded features it had to offer, mainly the higher BTU. My old Weber is 14 years old and is still being used by my neighbor. My first grill, a Char-Broil, lasted approximately 5 years.

    So it really depends on reliability versus price.
