Our Most Popular Thanksgiving Turkey Recipe

Summary

  • Buy a regular (non-enhanced), 12-14 pound turkey. Don't use a self-basting turkey for this recipe.
  • Brine for 24 hours, then air-dry overnight in the refrigerator.
  • Smoke at 325-350°F until 160-165°F in the breast, 170-175°F in the thigh, approximately 2-1/2 to 3 hours.
  • Let rest for 20 minutes before carving. Alternatively, wrap tightly in several layers of foil, place breast-side down in an empty cooler, and hold for 90-120 minutes before carving.
  • Collect the pan drippings for making gravy.

This is the most popular turkey brining recipes among members of The Virtual Weber Bulletin Board. Here's how I brined and cooked a whole turkey using this recipe on October 22-23, 2005. I hope you enjoy it!

Select And Prepare The Turkey

This is a 12.80 pound Albertsons Natural Turkey, just your basic, frozen supermarket turkey.

Choose a 12-14 pound turkey and thaw according to the package directions. Remove and discard any leg restraint, then remove the giblets from the neck cavity and the neck from the body cavity. Trim away large areas of fat or excess skin around the body cavity, rinse thoroughly inside and out, and pat dry with paper towels.

The turkey is now ready for brining.

Brine The Turkey

In preparation for brining:

  • Find a non-reactive container large enough to hold the turkey.
  • Make sure the container will fit in your refrigerator.

These pictures show a plastic barbecue sauce bucket that I got for free from a local barbecue joint.

Here's the recipe for the apple brine. It was published in Weber's Art of the Grill in 1999 and in the Weber Grill Out Times newsletter, Volume 5, Issue 2 in Fall 1999.

1 pound brown sugar (light or dark)

1 cup Diamond Crystal Kosher Salt

3 quarts cold water

3 oranges, quartered

15 whole cloves

6 large garlic cloves, peeled and crushed

Put the turkey in the brine breast side down (Photo 4). Place a heavy plate or bowl on top to keep the bird submerged, if necessary (Photo 5).

Brine the turkey for 24 hours. You may wish to stir the solution 2-3 times during the brining process. I'm not sure if this is necessary or if it actually does anything, but I like to do it anyway.

Since brining does not preserve meat, the turkey and the brine solution must be kept below 40°F throughout the entire brining process.

Air-Dry The Turkey

After brining, rinse the turkey thoroughly inside and out, and pat dry with paper towels.

Place on a rack over a rimmed baking sheet pan and allow to air-dry overnight (8-12 hours) in the refrigerator. This helps promote crispy skin during cooking.

Photo 6 shows the turkey air-drying in the refrigerator. Photo 7 shows how it looked after 12 hours in the fridge.

Fire-up the cooker using the Standard Method—one full Weber chimney starter of hot Kingsford Charcoal Briquets in the charcoal bowl, followed by another full chimney of unlit Kingsford, allowing all coals to become fully lit before cooking.

Foil The Water Pan

Cover the inside and outside of the water pan with wide, heavy duty aluminum foil. Place the pan inside the cooker, but leave it empty.

No Rub Required

Remove the turkey from the refrigerator at the same time you start firing-up the cooker. Let it sit at room temperature until ready to go into the cooker.

For better presentation, tie the ends of the drumsticks together using kitchen twine so they don't splay out into a funny shape during cooking. There's no need for any elaborate trussing. Also, fold the wing tips under the turkey.

Apply a very thin coat of vegetable oil or melted, unsalted butter to the turkey skin.

There is no barbecue seasoning or rub applied to the turkey as part of this recipe.

Smoke The Turkey

When all the coals are covered with gray ash, place 2-3 medium-sized chunks of dry cherry wood or other mild smoke wood on the coals. I used 1 chunk of cherry and 1 chunk of apple (Photo 8).

Assemble the cooker and place the turkey breast-side up on the top grate (Photo 9). Set the three bottom vents to 50% open. Open the top vent fully and leave it that way throughout the entire cook.

Cook the turkey until it measures 160-165°F in the breast, 170-175°F in the thigh, using an instant-read thermometer. Cooking time is approximately 2-1/2 to 3 hours.

There's no need to baste or rotate the turkey during the cooking process.

Rest Then Carve The Turkey

Remove the turkey from the cooker and let rest for 20 minutes before carving (Photo 11). Do not cover with foil, as this will cause the skin to go soft.

Alternatively, wrap the turkey tightly in several layers of wide, heavy duty aluminum foil, place breast-side down in an empty cooler, and hold for 90-120 minutes before carving (Photo 12).

I like to remove the breast as a single piece and then cut into slices across the grain using an electric carving knife (Photo 13).

Collecting Pan Drippings For Gravy

There are three common ways to collect pan drippings when smoking a turkey:

  • Cook the turkey in a shallow, disposable foil pan.
  • Cook the turkey on the top cooking grate. Place an empty foil pan on the bottom grate to catch the drippings.
  • Cook the turkey on the top cooking grate. Line the water pan with wide, heavy duty aluminum foil, but suspend the foil 1-1/2" above the bottom of the pan so it does not touch (Photo 14). This prevents the drippings from burning.

Assuming you don't over-smoke the turkey, the drippings will be perfect for making gravy—in fact, they're already seasoned by any rub applied to the turkey.

As you remove the turkey from the cooker, pour any accumulated juices inside the body cavity into the pan. You can also use the juices left in the bottom of a rimmed baking sheet pan after letting the turkey rest before carving.

You'll typically end up with about 1-1/2 cups of drippings (Photo 15).

Turkey on the Weber Grill

  • 1 oven ready turkey, defrosted
  • 1 tablespoon olive oil or vegetable oil
  • Salt and pepper

Remove neck and giblets; reserve for other uses. Remove and discard excess fat. Rinse the bird inside and out and pat dry. Season body cavity with salt and pepper. Tie legs together and twist wing tips under back. Brush turkey with oil and lightly sprinkle with salt and pepper. Arrange turkey breast side up, in center of cooking grate. Place lid on grill.

Cook 11 to 13 minutes per pound or until an instant read thermometer inserted into the thickest part of the thigh not touching bone registers 180 degrees and the juices run clear. Transfer turkey to a platter. Let stand for 15 minutes before carving.

Open all vents on the grill. Use charcoal dividers to hold the charcoal briquettes. Divide the briquettes evenly, place them in the dividers and place the dividers on either side of the charcoal grate, as close as possible to the outside edges. Ignite the briquettes and, keeping the lid off, let them burn until lightly covered with a gray ash, about 25 to 30 minutes. If necessary, use long-handled tongs to rearrange the briquettes so the coals will burn evenly on both sides. Place a foil drip pan on the charcoal grate between the baskets of coals. Put the cooking grate in place, positioning the hinged sides of the grate over the briquettes so that more charcoal can be added easily. Arrange the bird breast side up in the center of the cooking grate. Place lid on the grill, leaving all vents open, and grill as directed above. Add briquettes as indicated on the chart below at the end of each hour to maintain the heat.

For a 26 3/4-inch grill, use 30 briquettes on each side for the first hour of grilling and add 9 briquettes to each side every hour to maintain heat.

For a 22 1/2-inch grill, use 25 briquettes on each side for the first hour of grilling and add 8 briquettes to each side every hour to maintain heat.

For an 18 1/2-inch grill, use 20 briquettes on each side for the first hour of grilling and add 7 briquettes to each side every hour to maintain heat.

Ignite the grill and turn all burners to high. Close the lid and preheat 10 to 15 minutes to bring the grill to 500 to 550 degrees. Turn burners down to medium heat. Place turkey breast side up in a roast holder inside a foil drip pan. Position pan in the center of the cooking grate and place the lid on the grill. For three burner grills, set front and back burners to medium and turn off center burner. For two burner grills, turn the front and back burners to medium. Keep grill covered. Enjoy!

How to Bake a Potato on a Gas Grill

Two Takes on a Classic: How to Bake Potatoes on Your Gas Grill

What's the perfect accompaniment to your grilled steak? A baked potato, of course! If you connect baking a potato with an oven, then think again. Baking potatoes on the grill alongside your meat creates an easy meal option that lets you stay covering and avoid heating up the kitchen.

Baking potatoes on your gas grill is so easy that anyone can do it. In fact, gas grills are ideal for cooking potatoes because the heat is so even. either you're a former potato eater who likes a steaming baked potato with sour cream, or you're a potato skin lover who likes to score presentation points, you'll be able to grill your potatoes with ease.

Here are two straightforward options for flawless grilled potatoes.

Option 1: The former Whole Potato

  • After wholly washing the potatoes, spread a thin layer of cooking oil on aluminum foil. Use about 1 tbsp. For each potato. The oil will help keep the potato moist. If you're feeling adventurous, try adding some spices or herbs to the oil. For example, you can sprinkle some garlic and pepper or a diminutive cayenne pepper as you spread the oil evenly across the foil.
  • Wrap each potato individually in the aluminum foil.
  • Put the grill on low heat. You might want to start baking the potatoes before you cook the rest of your meal. They will stay hot for some minutes wrapped in the foil. You can also microwave them ahead of time to sell out cooking time. If you do pick to microwave, be sure to poke holes in the potatoes with a fork.
  • You can place the potatoes in any place on the grill, but avoid the hottest part. The top rack is the most convenient place, reserving the main shelf for your meat.
  • Cook for approximately 45 minutes, turning occasionally. Cook with the lid closed. Potatoes are done when a fork is certainly inserted into the center, or they feel slightly soft when squeezed. Do not overcook.

Option 2: Crispy Potato Halves

If you're curious in a prettier presentation, faster cook time, and crispy skins, try these straightforward steps:

  • Slice the potatoes in two, lengthwise.
  • Score the tops of the potatoes to originate a grid pattern that makes a nice presentation and speeds grill cooking time.
  • Brush the tops of the potatoes with cooking oil. Sprinkle seasonings (herbs, spices, salt, pepper, etc.) to taste. Place skinside down on the top shelf of the grill.
  • Cook for about 30 minutes.
Follow these easy steps to bake a former foil wrapped potato, or a crispy open-faced potato. Try both recipes for variety. either way, you'll originate a tasty side dish that will complement your steak, chicken, or other meat. Throw your vegetables on the grill, too, and you'll have a perfect meal all cooked in one place with easy clean-up.

Turkey on the Weber Grill

  • 1 oven ready turkey, defrosted
  • 1 tablespoon olive oil or vegetable oil
  • Salt and pepper

Remove neck and giblets; reserve for other uses. Remove and discard excess fat. Rinse the bird inside and out and pat dry. Season body cavity with salt and pepper. Tie legs together and twist wing tips under back. Brush turkey with oil and lightly sprinkle with salt and pepper. Arrange turkey breast side up, in center of cooking grate. Place lid on grill.

Cook 11 to 13 minutes per pound or until an instant read thermometer inserted into the thickest part of the thigh not touching bone registers 180 degrees and the juices run clear. Transfer turkey to a platter. Let stand for 15 minutes before carving.

Open all vents on the grill. Use charcoal dividers to hold the charcoal briquettes. Divide the briquettes evenly, place them in the dividers and place the dividers on either side of the charcoal grate, as close as possible to the outside edges. Ignite the briquettes and, keeping the lid off, let them burn until lightly covered with a gray ash, about 25 to 30 minutes. If necessary, use long-handled tongs to rearrange the briquettes so the coals will burn evenly on both sides. Place a foil drip pan on the charcoal grate between the baskets of coals. Put the cooking grate in place, positioning the hinged sides of the grate over the briquettes so that more charcoal can be added easily. Arrange the bird breast side up in the center of the cooking grate. Place lid on the grill, leaving all vents open, and grill as directed above. Add briquettes as indicated on the chart below at the end of each hour to maintain the heat.

For a 26 3/4-inch grill, use 30 briquettes on each side for the first hour of grilling and add 9 briquettes to each side every hour to maintain heat.

For a 22 1/2-inch grill, use 25 briquettes on each side for the first hour of grilling and add 8 briquettes to each side every hour to maintain heat.

For an 18 1/2-inch grill, use 20 briquettes on each side for the first hour of grilling and add 7 briquettes to each side every hour to maintain heat.

Ignite the grill and turn all burners to high. Close the lid and preheat 10 to 15 minutes to bring the grill to 500 to 550 degrees. Turn burners down to medium heat. Place turkey breast side up in a roast holder inside a foil drip pan. Position pan in the center of the cooking grate and place the lid on the grill. For three burner grills, set front and back burners to medium and turn off center burner. For two burner grills, turn the front and back burners to medium. Keep grill covered. Enjoy!

  • Prepare the brown sugar and cayenne pepper topping.
  • Arrange bacon on a broiler pan.
  • Cook for 20 minutes at 300-350°F.
  • Turn bacon, apply topping, and cook another 20-30 minutes or until done.

In 2003, several members of The Virtual Weber Bulletin Board posted messages about something called "pig candy"—bacon that's baked with a brown sugar topping. It's a decadent treat for special occasions like a holiday brunch. Since then, I've seen other recipes that add crushed pecans to the brown sugar mix, and recipes using maple syrup instead of brown sugar.

Here are some pictures I took when I prepared pig candy using the Weber Bullet on December 9, 2004.

Arrange Bacon On A Broiler Pan

Buy good quality, thick-sliced bacon and arrange it on a broiler pan so the bacon fat drains during cooking.

Before starting, make sure the WSM lid fits over your broiler pan while sitting on the top cooking grate.

I splurged on Niman Ranch Uncured Center Cut Bacon, which has already been apple wood smoked. The 12-ounce package filled the broiler pan, as shown here.

I used a broiler pan because I like to wash the cooking grate after each use and I felt washing a sugary broiler pan would be easier. If you clean your grates by burning them off in a gas grill, you can cook the bacon directly on the top cooking grate, with an empty, foil-lined water pan below to catch the drippings.

Prepare The Brown Sugar Topping

Place 1/2 cup of light brown sugar (packed) and 1/4 teaspoon of cayenne pepper in a bowl, mix thoroughly, and set aside. This small amount of cayenne will provide the slightest bit of heat; if you like more heat, use more cayenne.

Light one full chimney of Kingsford Charcoal Briquets. When the coals are hot, spread them out in the charcoal chamber and assemble the cooker.

Do not put the water pan in the cooker.

If you are using a good quality smoked bacon, there's no reason to add smoke wood to the fire.

Open the top and bottom vents fully and leave them that way throughout the cooking process.

Put the broiler pan on the top cooking grate. The cooker should be running between 300-350°F. After 20 minutes, turn the bacon. If the slices at the ends of the pan are cooking faster than those in the middle, swap them.

Sprinkle the brown sugar topping on the bacon, making sure each slice is evenly coated. I used the entire 1/2 cup of topping, which gave a nice coating to each piece, and the excess just melted away. Other recipes I've seen use 1/2 cup brown sugar for 1-3/4 pounds of bacon—over twice as much bacon as I cooked here—so you be the judge of how far you want to stretch the topping.

Cook the bacon another 20-30 minutes, depending on how hot the cooker is running, until done to your liking.

Here's how the cooker temperatures and vent settings went during the cooking process.

Note that the vent percentages represent the way I set the vents at the time indicated.

Serving Pig Candy

Photo 3 shows the pig candy as it came out of the cooker. Photo 4 shows individual slices on a plate.

Pig candy is sweet and delicious, and that little bit of cayenne gets your attention without being overwhelming.

If you're serving pig candy to your guests at a buffet-style brunch, you may wish to cut the slices in half using kitchen shears. However, there's nothing wrong with enjoying whole slices. How sweet it is!
